3.5-pound whole chicken /1575g

½ onion, thinly sliced

2 cloves garlic; minced

1 cup chicken stock /250ml

½ cup white wine /125ml

3 tbsp butter, melted /45ml

½ tsp paprika /2.5g

½ tsp ground black pepper /2.5g

½ tsp dried thyme /2.5g

1 tsp salt /5g


1- Into the Foodi, add onion, chicken stock, white wine, and garlic. Over the mixture, place the reversible rack. Apply pepper, salt, and thyme to the chicken; lay onto reversible rack breast-side up.

2- Seal the pressure lid, choose Pressure, set to High, and set the timer to 26 minutes. Press Start. When ready, release the pressure quickly.

3- While pressure releases, preheat oven broiler. In a bowl, mix paprika and butter.

4- Remove the reversible rack with chicken from your pot. Get rid of onion and stock.

5- Onto the chicken, brush butter mixture and take the reversible rack back to the pot. Cook under the broiler for 5 minutes until chicken skin is crispy and browned.

6- Set chicken to а cutting board to cool for about 5 minutes, then carve and transfer to a serving platter
