Ingredients:

1 tbsp. butter

1 tsp curry powder

2 bananas, sliced ½-inch thick

1 lb. meat tenderloin, cubed

½ tsp salt

½ cup pineapple juice, unsweetened

¼ cup onion, chopped fine

¼ cup coconut flakes, unsweetened

Directions:

1- Add butter to the cooking pot and set to sauté on medium heat.

2- Once the butter has melted, stir in curry powder until foamy.

3- Add bananas and cook until golden brown, about 3-5 minutes. Transfer to a plate.

4- Add meat and cook until golden brown, about 6-8 minutes. Season with salt.

5- Stir in pineapple juice and onion. Cover, reduce heat, and simmer 10 minutes until pork is tender.

6- Stir in coconut and bananas and toss gently to combine. Serve over cooked rice.
