Flounder Oreganata

Ingredients:
1/3 cup rolled oats
¼ cup panko bread crumbs
2 cloves garlic, chopped fine
2 tbsp. fresh parsley, chopped, divided
½ tsp oregano
4 tsp fresh lemon juice
1 tsp lemon zest
1 tbsp. olive oil
1 tsp salt, divided
½ tsp pepper
4 flounder fillets
Lemon wedges
Directions:
1- Place the rack in the cooking pot and top with a piece of parchment paper.
2- Add the oats to a food processor and pulse until they are finely ground.
3- In a small bowl, combine oats, bread crumbs, garlic, 1 ½ tablespoons parsley, oregano, lemon juice, zest, oil and ½ tsp salt.
4- Lay the fish on the parchment paper and season with salt and pepper. Spoon bread crumb mixture over the fish, pressing lightly.
5- Add the tender-crisp lid and set to bake on 450°F. Bake 10-12 minutes until topping is golden brown and fish flakes easily with a fork. Serve garnished with parsley and lemon wedges.
