Ingredients:

Butter flavored cooking spray

3 eggs

1 cup almond flour, sifted

1/3 cup Stevia

1 tsp baking powder

1 tsp apple pie spice

¼ cup coconut oil, melted

½ cup + 1 tbsp. heavy cream

1 cup carrots, grated

½ cup walnuts, chopped

4 oz. cream cheese, soft

¼ cup butter, soft

½ tsp vanilla

½ – 1 cup powdered Stevia

Directions:

1- Lightly spray a 6×3-inch cake pan with cooking spray. In a large bowl, beat eggs, flour, Stevia, baking powder, apple pie spice, oil, and ½ cup cream until fluffy.

2- Fold in carrots and nuts and pour into prepared pan.

3- Place in cooking pot and add tender-crisp lid. Set to bake on 350 °F. Bake 30-35 minutes or until cake passes the toothpick test. Transfer to wire rack and let cool 10 minutes in pan, then invert onto serving plate.

4- In a large bowl, beat cream cheese, butter, and remaining cream until smooth and creamy.

5- Stir in vanilla and enough powdered Stevia until frosting is thick enough to spread. Cut cake in half
horizontally and spread with 1/3 of the frosting in the middle, then frost outside. Serve.
